Sweet and Sour Something



This is great sauce for Sweet and Sour Meatballs which I often take in a slow cooker to parties, or Sweet and Sour Chicken which I like to make at home. I bet it even works well with Pork.

Serve it whichever way over rice, and you've got a meal that can't be beat.

Ingredients
1 cup sugar
2 cloves garlic, crushed
1 cup vinegar 1 green pepper, cut in strips
1 cup pineapple juice
3 tablespoons cornstarch
1/3 cup soy sauce
8 ounce can of pineapple chunks, drained

Instructions
Combine all ingredients except the pineapple.
Cook, stirring, until thickened.
Add pineapple just before serving.

Coconut Shrimp with Piña Colada Sauce


For the Shrimp

1 pound large peeled Shrimp
2/3 cup crushed Ritz or plain breadcrumbs
1 cup shredded coconut
1/4 teaspoon garlic powder
1/4 teaspoon salt
1 egg
1/2 stick melted butter 

Preheat oven to 350.  I use Parchment paper on a baking sheet, but you may find it easier to just spray it with PAM. Combine crushed crackers, coconut, garlic and salt in a container for dipping. In a separate dipping bowl, scramble the egg. if its small eggs, you may need two.Dip each shrimp in the egg, then into the crumb mixture.  Place on the prepared baking sheet.  When all shrimp are coated, pour a bit of melted butter over each. 

 Bake for 20-25 minutes or until shrimp are pink and the coating is golden brown.

For the Dipping Sauce

1/2 cup sour cream
2 tablespoons pineapple juice
1/4 cup piña colada mix
3-4 tablespoons sugar

Combine all ingredients, chill and serve.

Polynesian Chicken

Ingredients for Polynesian Chicken
1 cut up chicken
2 tablespoons lemon juice
2 tablespoons Dijon mustard
1/2 cup brown sugar
1/2 cup honey
1 can of pineapple slices in juice

Mix lemon juice, mustard, honey, and brown sugar together. Marinate chicken in  mixture for at least 3 hours. one hour before baking, add 1/2 the the pineapple juice to the mixture. continue to marinate.  put chicken in baking pan, arranging a pineapple slice on each piece. Bake at 350 degrees, basting frequently with marinade and remaining pineapple juice until cooked through.  Serve with rice & broccoli.

Sauerbraten Style Meatballs

Ingredients
A package of Freezer meatballs, or 24 1 inch meatballs of your own recipe
2 cups water
1 cup unsweetened pineapple juice
2 cubes of beef bouillion
8 ginger snaps
1/3 cup packed brown sugar
1/4 cup raisins
2 tablespoons lemon juice
Hot cooked rice or noodles

In a medium saucepan bring water, pineapple juice, bouillon to boiling. coarsely crush gingersnaps, then add those along with brown sugar, raisins and lemon juice to the pot. Stir, cooking until gingersnap crumbs are dissolved. Add meatballs and simmer about 20 minutes or until meatballs are cooked through, stirring occasionally. Serve over hot cooked rice or noodles.
