Anadama Bread


A classic recipe of Anadama bread made from cornmeal mush that comes out brown, crusty and chewy.

Ingredients:
2 cups cold milk
1/2 cup cornmeal
1 and 1/2 teaspoons salt
1/3 cup molasses
3 tablespoons shortening
1 package dry yeast
4 and 1/2 to 5 and 1/2 cups flour

Put 1 cup of the milk and gradually tire in the cornmeal. Place over medium heat and cook, stirring constantly for about 5 minutes or until the mush has thickened. Set aside to cool.
Put the other cup of milk in a separate pan and add salt, molasses and shorteneing. Heat until  warm to you finger, and then pour mixture into a mixing bowl.  sprinkle the yeast over stir, and let dissolve.  after a minute or so, add the cornmeal mush and 2 cups of the flour.
 Beat until throughly mixed then add more flour to make a manageable dough. turn onto a lightly floured surface and knead for a minute or two. Let rest 10 minutes.  Continue kneading the dough until smoth and elastic, sprinkling on flour to keep it from getting sticky.
Place in a large greased  bowl and let rise until doubled in size. Punch down dough and shape into two loaves.   Place in greased loaf pans. Let rise until dough reaches top of pans or until doubled. Bake in apreheated 350 degree oven for 45 minutes. remove from pans and let cool on rackss

Granny's Baked Beans

Granny's Baked Beans


Granny's Baked Beans were always made in the big yellow pyrex bowl, and much like Nana's Curry Chicken Wings, is all done by estimate. So each time they come out slightly different, but very similiar.

Get baked beans in a can.  It doesn't matter the brand.  Any will work.  Store brands generally need more molasses & brands like Bush need less.  Fill bowl so there is still at least 2.5 inches to spare.

Cook approx 3/4 pounds of bacon.  Give or take depending on your taste buds of the day.
Add to bowl. 

 Add most of a 12 oz bottle of Grandma's Molasses (Yellow label - use brand).  Mix in brown sugar (light or dark your choice) maybe 1/2 box.

Add 2 Tablespoons or so of Heinz Ketchup and 1 Tablespoon of Gulden's mustard.  Your choice really of brand and amounts.

I believe all ingredients are covered.  After stirring well, bake in oven for hours until thickened & cooked down.  Any temperature of 375 or less works.

Molasses Cookies

Granny's Molasses Cookies:

1 and 1/2 cups of oil
2 cups sugar
1/2 cup molasses
2 eggs
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon cloves
4 cups flour

Mix in order given. Batter works much better if chilled over night. Roll into 1 inch balls. Roll balls in granulated sugar. Bake at 375 Degrees for 8-10 minutes on an ungreased cookie sheet. Take off cookie sheet while still warm, or they may stick.

World War 1 Cake

Ingredients
1 cup corn syrup
1and 1/2 cups water
2 Tbsp. fat
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. soda
1 cup molasses
1 package raisins
1 tsp. salt
1/2 tsp. cloves
3 cups flour
2 tsp. baking powder

Instructions
Boil together 5 minutes syrup, molasses, water, raisins, fat, salt, cinnamon, cloves and nutmeg. Cool, add sifted dry ingredients and bake i two loaves 45 minutes in moderate oven.

Notes: Even better after a few days. One cup of oatmeal may be used in place of 7/8 cup of flour.

Oatmeal Bread

To make two loaves of Oatmeal bread:

2 cups oatmeal
5 cups flour
2 cups boiling water
1/2 cup molasses
1/2 tablespoon salt
1 tablespoon shortening
1 yeast cake dissolved in 1/2 cup lukewarm water

Pour boiling water over  oatmeal. Let stand 1 hour add molasses, salt shortening, flour and yeast. Let raise to double the size. beat throughly and turn into buttered tins. let rise and bake.

Soya Spare Ribs



2 - 2 1/2 Ibs. spare ribs

Wash them carefully and put them in the oven for about 30 minutes at 350 degrees.   Reduce temperature of oven to 250 degrees.   Remove excess water in the pan and pour on your sauce.

2 Tbsp. molasses
1 clove garlic minced
3/4 bottle soy sauce
 2 Tbsp. vinegar

Mix well, pour over spare ribs.   Put back in oven at 250-225 for 2 hours.

Hasty Pudding


4 ¼  cups water
1 cup oatmeal ( or rye flour or cornmeal)
½ teaspoon salt
Milk or cream to taste
Sugar, molasses, maple syrup or honey for sweetening.

 Bring a quart of water to boil in a pot. Remove from the fire. In a separate container, mix ¼ cup of water and 3 tablespoons of the oatmeal together.  Add the oatmeal mixture and salt to the pot of water. Place back on fire. Slowly add the remaining oatmeal ¼ cup at a time, stir to blend, and bring pot back to boil before adding the next bit of oatmeal. This should take about a half-hour. Serve hot with milk or cream, butter and sweetner to taste.

Take leftover mush and chill. Slice and dust with flour to fry in butter. Serve with your choice of syrup or honey.

This recipe is from the 18th century, adapted with modern measurements.

Sweet Tangy Burgers

Mix together:
1/4 cup ketchup
3 tablespoons molasses
2 tablespoons Worcestershire sauce
1/2  minced small onion
1 clove garlic, minced
1/4 teaspoon ginger
1 teaspoon salt
1/2 teaspoon pepper
1/4 tsp ground nutmeg

Once well blended,  mix in with 2 pounds ground chuck. Make 8 burgers about 1/2 inch thick and grill 4-7 minutes on each side.
